Going Confidently In The Direction Of Our Dreams

I know I am not alone in breathing a big sigh of relief at the recent news that Abby Sunderland has been found alive on her ship in the Indian Ocean. Her goal to be the youngest to navigate around the world has stirred up many different, conflicting emotions for so many people. I cannot imagine what her parents have gone through.

I have so much admiration for this courageous young lady; how many of us ever get the courage and determination to do whatever it takes to set a goal for ourselves and actually try to achieve that goal, regardless of our age? I know she has to be disappointed about the damage to her ship and that her journey is coming to an end, but I am so proud of her and inspired by her that she ever began this journey. I am also awestruck by her parents, that they were also brave enough and confident in their child enough to let her try to achieve her goal. How many of us, as parents, crush our children’s dreams by not having faith in them?

I know that whatever goal this daring young woman sets for herself, she will accomplish it and make a difference in this world. Reading her story has been so inspirational. It makes my goals, to live a healthier, more frugal lifestyle and to finish and publish my novel seem both very insignificant and so very easy in comparison.

So, I ask myself, and I hope others will ask themselves, what are your dreams? Will you be inspired by a young brave girl and go confidently in the direction of your dreams?

Easy Sweet N Sour Chili Chicken

In a large crockpot add the following:

5 pounds boneless, skinless, chicken breast filets.
4 thickly sliced carrots, about 1" chunks
1 thinly sliced yellow or white onion
1 thickly sliced green pepper
2 coarsely chopped green onions
4 minced whole garlic cloves
Several Tablespoons each Catalina French Dressing and Olive Oil & Vinegar w/herbs dressing
Several Dashed of Chipolte Tabasco Sauce
1/8 of package of Hot Taco Seasoning

Bake on High for 5-6 hours or on Low 10-11 hours.

Serve over rice or noodles.

The best way to describe this is it's like sweet n sour chicken without the chicken being battered and fried and the same sweet n sour sauce but if that sauce was spicy.

This makes 12+ large servings.
